Porphyra is a red algae of the Bangliales family. It takes its name from the purple color. It's harvested during eight months on the northern coast of Brittany.

Tips for use
Spread the sushi rice (already cooked and with vinegar added) onto the nori leaf. Decorate as desired (cucumber, avocado, salmon, etc.) then roll with the assistance of a bamboo mat. Let your imagination run wild to come up with sushi and maki recipes: salmon, prawns, tuna, avocado, cucumber, black radish… Then season to taste with soya sauce or wasabi. Keep in a cool, dry and dark place.
