Agar-agar is a natural gelling agent of marine origin, extracted from red seaweed. Presented in flake form, it is odorless, tasteless, and dissolves in hot water. Once cooled, it forms a firm and translucent gel, ideal for making desserts, jellies, jams, or savory dishes. Widely used in plant-based cooking as an alternative to animal gelatin, agar-agar is also rich in fiber.

Tips for use
Bring the preparation to a boil. Add the agar-agar (2 to 4 g per liter, depending on the desired result). Stir and let boil for 8 minutes. Let cool. To make a firm jelly: use 3 g (about 1 tablespoon) per ½ liter of liquid. For a flan-like texture: use 3 g (about 1 tablespoon) per liter. Agar-agar is ideal for both sweet and savory recipes, combining indulgence with lightness.
