Durum wheat probably appeared as early as the Neolithic. It was found in the 7th millennium B.C in Can Hassan III (Turkey) and Tell Aswad (Syrie) then in increasing proportions at the end of the Neolithic and in the 5th millennium in Greece and the western Mediterranean. Durum wheat (Triticum durum) has got an elongated grain, a thin shell and a glassy almond.

Tips for use
Place the pre-cooked, hulled wheat in 3 times its volume of lightly-salted water. Gently bring to the boil then reduce to a simmer and cook for 20–25 minutes. Season to taste. Hulled wheat is great as a side dish (to meat, fish or vegetables), or when used in gratin, veggie burgers and soup. Keep in a cool, dry and dark place.
