Spelt, also described as "Gallic wheat", is a cereal similar to soft wheat. Known for its nutritional quality and its high protein content, spelt which is slightly nutty, is often qualified of "caviar of cereal". The traditionnal method of precooking uses steam, a method preserving spelt's nutritional qualities.

Tips for use
Place the pre-cooked, hulled barley in 4 times its volume of lightly-salted water. Bring to the boil then reduce to a simmer and cook for 25 minutes. Season to taste. Hulled barley can be eaten alongside meat, fish or vegetables, in gratin and in soup. It's equally delicious when consumed cold in salads. Keep in a cool, dry and dark place.
