White lupin with a hazelnut flavour has been cultivated for more than 4,000 years. Lupin flour is obtained from sweet white lupin seeds (Lupinus albus) that have been cleaned, hulled and ground. It is a yellow flour, with a specific smell and taste.

Tips for use
Lupin flour should be used alongside a traditional flour (and should not make up more than 1/3 of total flour content). Lupin flour will bring a golden-yellow colour to your patisserie, sweet pastry, biscuit and cake recipes. Its strength as an emulsifier means that it can be used to partially replace eggs or butter in patisserie or even mayonnaise. Keep in a cool, dry and dark place.
