Green lentils can be enjoyed hot in simmered dishes, rustic soups or tasty purées, and cold in salads for a healthy, balanced option. They go perfectly with crunchy vegetables, fresh herbs and a light vinaigrette. Rinse and cook 1 part green lentils in 3 parts unsalted boiling water for 8-10 mins.
