An oleaginous dried fruit, cashew nuts are whole and ivory white in color, in the shape of a half-moon about three centimeters long. Discovered in Brazil by the Portuguese, the cashew tree was taken by settlers in 1578 to Mozambique, then to the state of Kerala in India and finally spread to other parts of Asia. The cultivation has since spread to other parts of the world, particularly West Africa where production, for climatic reasons, remains quite low.

Tips for use
They’ll bring crunch, originality and an exotic flavour to your savoury recipes (such as rice pilaf, curries, salads, breadcrumbs, or alongside fish or poultry); they’re also perfect in patisserie, such as tarts and biscuits. Cashews can be eaten as an appetizer, by themselves or mixed with dried fruit. Keep in a cool, dry and dark place.
