Tips for use

Bring 4 volumes of lightly-salted water to the boil. Over a high heat, slowly pour 1 volume of polenta into the water, stirring regularly until it thickens. Remove from the heat after 2–3 minutes. Polenta can be eaten as it is with simply a little butter, cream or olive oil added. It can adapt to satisfy all your culinary desires, whether crunchy, creamy or spongy. It’s perfect in veggie burgers, bread, purées or cakes. Keep in a cool, dry and dark place.
