Preparation
Step 1In a saucepan, soak 65 g of Mediterranean vegetable mince in 300 ml of water according to the instructions on the packaging.
Step 2Wash and cube the courgettes. Pit the olives and dice them.
Step 3In a hot frying pan, sauté the pressed garlic, olives and courgettes.
Step 4Then add the Mediterranean mince, with the rest of the cooking water if any. Sweat all the ingredients together. Add a few tablespoons of water, cover and simmer for 5 minutes.
Step 5Allow the mixture to cool slightly. Put the preparation in a blender, together with the rice milk and rice flour, salt and pepper. Pulse to keep some chunks in the rillettes.
Step 6Allow to cool, put in a jar.
Step 7You can enjoy immediately or leave in a jar in the fridge for up to 5 days.
