Preparation
Step 1Prepare the melon by cutting it into slices and then into pieces. Set aside.
Step 2In a saucepan, add the sugar and a little water. Bring to a boil for 2 minutes and then reduce over medium heat for 5 minutes. Stir regularly.
Step 3Pour in the balsamic vinegar slowly and cook for 5 minutes over medium heat to obtain a slightly thick caramelised consistency.
Step 4Place the sesame seeds in a container.
Step 5Prick the melon cubes with a wooden skewer. Dip the melon in the caramel and then in the sesame seeds to coat the lower part of the melon. Repeat for all the melon cubes.
Step 6Allow to cool before serving.
